Waterfowl or upland, wild birds make some of the finest dishes there are. The possible avian table fare in the Midwest includes dove, grouse, pheasant, & turkey as well as ducks & geese. Having either white or red meat (depending on species) make wild bird dish varieties seem endless.

My personal new favorite duck dish! Prepared with a medley of Mallard and Wood Duck, this stew was savory and delicious. The low and slow approach created tender bites of wild duck rich in flavor from a hot bath in beef broth and red wine. Add in some baby red potatoes and carrots and what you get is a hearty stew that will warm your soul and fill your belly.

Fishing is a favorite pastime for many growing up in the Midwest and so it is only natural that some freshwater cuisine is common table fair. So common in fact, that it's hard not to be within a stones throw of a fish fry on a Friday night in Minnesota or Wisconsin. Nothing wrong with that!
